Sometimes it is very hard. A typical horse is trained not just commands and such but they are taught manners as well. Don't stomp on feet, no biting, no cribbing, etc. An average horse begins training, slowly, while still a foal. But while I'm surprised, I probably shouldn't be. Horses are still used as food animals in many parts of the world, and sports where animal deaths are expected are also pretty common. Hell, we've had dogfighting and cockfighting busts in the U.S., and one of the excuses which gets trotted out is that such events are not only legal but have cultural significance in other areas of the world.
